Ding'an Sweet and Sour Radish Slices


This traditional cold vegetable dish dates back to the Ming Dynasty. The radish slices are soaked in salt water for 15 minutes, and then rinsed with fresh water. After drying, a mixture of sugar, vinegar, red peppers, and peanut oil is added, and the dish is then refrigerated for 30 minutes. Crisp and slightly sweet, these radish slices make a great appetizer or palate cleanser.
