How to make Hainan Sweet Coconut Tapioca Soup 椰汁西米露

 

 

 

Carolyn Phillips of the extraordinary Madam Huang's Kitchen is a Chinese Cuisine Foodie of the first class. Here at Visit Hainan we were thrilled to see that her latest recipe is for none other than a wonderfully refreshing Hainan dessert – Sweet Coconut Tapioca Soup!

 

Coconut milk is a wonderful ingredient that really gives the soup that true Hainan flavor, and, as Ms. Phillips points out, shows the deep connection between Hainan and Southeast Asian Cuisine, specifically Vietnam, which lies just across the water from Hainan's West Coast.

 

You might not realise that the tapioca pearls also come from tropical palm trees, this time the Sago Palm. Together with fresh sweet melons and a dash of Coconut Rum (optional but here at Visit Hainan we heartily recommend it) these ingredients come together to make the perfect summer refreshment to enjoy after a long day enjoying the tropical beaches, mountains, and jungly rainforests of Hainan.
